There was an 'oh no' moment when I realised I was going to have to cook. This was quickly followed by another 'oh no' moment when I realised I didn't have any ingredients.
So, I made pizza.
1. Mix all the ingredients in a bowl.
2. Tip the dough onto the worktop and knead it for as little time as you can get away with. You want the dough to look smooth but not so smooth that all your children have left home to forage for their own food.
6. Place the bases on the tray.
Drat, I bought rings! Thought they were chunks. That'll slow me down.
But I did have some very nice oregano that a friend brought back from Greece.
8. Bake at 180oC/360F for 15 minutes. (Disclaimer: Until nicely golden, or however browned you prefer).
I served ours with roast potatoes and roast sweet potatoes.
Oh wow. I totally haven't got the hang of making pizza look appetising on camera...
Francesca's friend had come to tea. I'm pretty sure we had pizza last time she came. And the time before that. Why break with tradition?!
I used my current favourite brown bread recipe for the pizza dough. I didn't have time to let it rise or do anything fancy like prove, of course, so it was a sort of hastened-up version but it worked out well.
Ingredients
350g/12 oz/2⅓ cups strong plain flour
150g/5 oz/1 cup wholemeal flour
1 tsp instant dried yeast
2 tsp salt
315ml/10 fl oz/1⅓ cups water

3. Grease a baking tray or two and panic about toppings. I found a tin of pineapple, some ham, some oregano, a tin of chopped tomatoes and some cheddar, which I grated.
4. Divide the dough into 8 pieces and pre-shape these into bread-roll shapes. I feel a "shaping and pre-shaping" tutorial coming on, so just trust me on that for now. It's all to do with allowing the dough to relax, making it easier to roll out, ok?
